Marinated Pork [4]

IMPORTANT: The meat must be marinated for 48 hours
2 lbs lean pork
6-10 cloves of garlic sliced
1 tsp paprika
1 tsp ground pepper

1 tsp sweet marjoram
1 tsp All Spice
1 tsp salt

1 tbsp aged vinegar
1 tsp oil
White wine to cover
  1. Cube the pork and marinate with all of the ingredients except the oil for 48 hours.
  2. Transfer to a saucepan, bring to the boil and simmer for 30 minutes or until the pork loses its pinkness.
  3. Heat the oil in a skillet, add the pork cubes from the marinade, and cook until brown turning frequently.
  4. Strain the marinade, slowly adding it to the skillet from the strainer, allowing it to reduce after each addition.
  5. Serve the pork with the marinade sauce.
