Maple Syrup Soufflé (Delma Gomes)
1 cup maple syrup
1 tbsp hot water

4 egg whites
2 tsp baking powder
3-4 tbsp corn flour
3 oz castor sugar
  1. Boil the maple syrup until it reduces to ¾ cup and then cool.
  2. Dissolve the corn flour in sufficient hot water.
  3. Beat the egg whites until fluff, and then add the corn flour mix and the baking powder.
  4. Finally, add the cooled maple syrup and bake at 350F/176C for 15 minutes.
