Macaroons (Maria Teresa Faria de Freitas)
2 oz almonds
1 tsp rice flour
1 tbsp ground almonds
1 ½ egg whites
4 oz castor sugar
Almonds for top

  1. Chop the almonds very finely and pound well in a mortar.
  2. Add sugar, ground almonds and rice flour and pound again.
  3. Beat the egg whites slightly and mix with other ingredients to a firm consistency.
  4. Roll into small balls, place on rice paper and put a split almond on top of each.
  5. Brush with egg white and then bake in a slow oven till crisp and slightly brown.
