Liver Soufflé (Gene Watkinson) | ||
2 cups minced liver and bacon 3 egg yolks well beaten ½ cup stale soft breadcrumbs | 2 cups of a thin white sauce 3 egg whites beaten stiff | 1 tbsp parsley 1 tbsp wine |
1. Add the breadcrumbs to the sauce and cook for 2 minutes. 2. Remove from the heat and add the minced meats, egg yolks, parsley and wine, mixing well. 3. Fold in the egg whites. 4. Turn out into a buttered baking dish and bake for 35-45 minutes at 325F/162C. |
