Liver and Bacon Savory (Fay Anne de Freitas)
12 oz sliced liver
12 oz streaky bacon
1 bunch salad onions
2 lbs oil

4 oz mushrooms
1 ¼ oz butter
3 oz cheese
Salt and pepper

½ pint milk
1 ½ oz flour
Paprika

  1. Thinly slice the onions and mushrooms.
  2. Remove the rind from the bacon and place the bacon in a pie dish and cover with liver.
  3. Cover with onions and mushrooms and the remaining liver – add salt and pepper to taste.
  4. Cover with foil and cook in a pre-heated oven at 375F for 3 minutes.
  5. Prepare the white sauce with milk, flour and butter and pour over the dish.
  6. Sprinkle with paprika and cheese.
  7. Place in the oven for a further 20 mins at 375F.
