Lemon Pie (Delma Gomes)
2 cups water
1 cup sugar
2 tsp grated lemon rind

4 tbsp corn starch
3 eggs separated
1 tsp salt
2 tbsp flour
4-6 tsp lemon juice
1 baked pie crust
  1. Put water to boil.
  2. Mix corn starch, flour and sugar with ½ cup cold water until smooth. Mix in the egg yolks, slightly beaten.
  3. Add slowly to the boiling water and cook for 5 minutes, stirring constantly.
  4. Remove from the heat and add the lemon juice, rind and salt.
  5. Pour the mixture into the baked pie crust.
  6. Make the meringue by beating the three egg whites with sugar to taste.
  7. Spread on top of the pie and bake until light brown.
