Jiffy One-Egg Cake (Delma Gomes)
2 cups sifted cake flour
½  tsp salt
¾ cup milk
2½ tbsp double-acting, or,
3 tbsp fast-acting baking powder
1 cup sugar
1/3 cup shortening (soft)
1 egg
  1. Have shortening at room temperature.
  2. Grease 8” deep layer cake pan and sprinkle with flour, shaking out excess.
  3. Preheat the oven to 350F/176C.
  4. Sift the flour before measuring into a large bowl of the Mixmaster, together with salt, sugar  and baking soda.
  5. Stir to mix and then add the softened shortening, and the milk and vanilla.
  6. Beat on #3 speed for 2 minutes, scraping the bowl while beating.
  7. Stop mixture and scrape the beaters.
  8. Add the egg.
  9. Beat on #3 speed for 1 minute, scraping the bowl while beating.
  10. Pour into the baking pan and bake in a moderate oven, 350F/176C for 25 to 30 minutes.
  11. Remove from pans and cool.
  12. Ice with whipped banana icing.

Makes 1 medium-sized cake
