Hungarian Chocolate Frosting  – Very good
(Delma Gomes from Noémi McCowan)
3 squares unsweetened chocolate
1 ½ cups confectioner’s sugar sifted

2 ½ tbsp hot water
4 tbsp butter
3 egg yolks
  1. Melt the baker’s chocolate in a double boiler. Remove from the heat and add sugar and water and blend.
  2. Add the egg yolks, one at a time, beating well after each.
  3. Add the butter a tablespoon at a time, beating well after each.

Makes enough frosting to cover the tops and sides of two 9” layers.
