Home-made Salad Cream (Fay Anne de Freitas)
1 oz plain flour
2 oz castor sugar
½ pint milk
4 oz butter – cut into small cubes

4 tsp dry mustard powder
1 tsp salt
½ pint malt vinegar
1 egg
  1. Mix flour, mustard, sugar and salt into a saucepan.
  2. Gradually stir in the milk and whisk well to make sure there are no lumps.
  3. Heat saucepan stirring well all of the time.
  4. As it begins to thicken, remove from the heat and beat thoroughly to remove any lumps.
  5. Replace over heat and allow to come to the boil.
  6. Stir in vinegar and butter cubes and continue to stir until fully blended.
  7. Remove from heat and let cool slightly.
  8. Beat egg in a separate basin, and then whisk into the mixture.
  9. Return pan to the heat long enough to cook the eggs.
  10. Pour the salad cream into wide screw-top jars and allow to rest until cool
