- Start the oven at 350F/176C or moderate.
- Arrange the pineapple slices in the bottom of a 10”x5”x3” pan.
- Melt the butter/margarine and mix with a ¼ cup of brown sugar. Spread this on top of the pineapple.
- Mix the meats together thoroughly in a bowl. Mix in the breadcrumbs, salt and pepper. Stir in the milk and beaten eggs, mixing well.
- Pack this mixture into the pan
- Combine remaining brown sugar with the mustard and stir up with the vinegar and pineapple juice.
- Pour this syrup over the meat and bake for 1 hour.
- At this point, turn the loaf upside down in a roasting pan and pour off about half of the liquid.
- Put back in the oven and bake for another ½ hour, basting occasionally.
- Serve piping hot.
