Ham Upside Down Loaf « [6] (Delma Gomes)
1 can pineapple slices
1 lb ground smoked ham
½ tsp salt
2 eggs slightly beaten
2 tbsp pineapple juice
1 cup fine breadcrumbs
1 cup milk

3 tbsp butter or margarine
1½ lb ground pork
A few grains pepper
¼ tsp dry mustard
¾ cup brown sugar
2 tbsp vinegar

  1. Start the oven at 350F/176C or moderate.
  2. Arrange the pineapple slices in the bottom of a 10”x5”x3” pan.
  3. Melt the butter/margarine and mix with a ¼ cup of brown sugar. Spread this on top of the pineapple.
  4. Mix the meats together thoroughly in a bowl. Mix in the breadcrumbs, salt and pepper. Stir in the milk and beaten eggs, mixing well.
  5. Pack this mixture into the pan
  6. Combine remaining brown sugar with the mustard and stir up with the vinegar and pineapple juice.
  7. Pour this syrup over the meat and bake for 1 hour.
  8. At this point, turn the loaf upside down in a roasting pan and pour off about half of the liquid.
  9. Put back in the oven and bake for another ½ hour, basting occasionally.
  10. Serve piping hot.
