Green Peperonata Sauce (Fay Anne de Freitas)
1 medium onion
1 tbsp oil
4 large tomatoes

2 large green peppers
1 clove garlic
Salt and pepper to taste
ΒΌ pint stock or water
1 tbsp castor sugar
  1. Slice onion and fry in the oil until brown.
  2. Add peeled tomatoes and continue cooking on low heat.
  3. Add shredded green peppers, crushed garlic, sugar and seasoning.
  4. Stir in the stock and continue to cook for 35 to 40 minutes, stirring occasionally to prevent sticking.
  5. The sauce is ready when most of the liquid has evaporated.
  6. Use hot or cold.
