German Sweet Pastry (Delma Gomes)
2 ½ cups pastry flour
2/3 cup butter

1 egg
A few grains of salt
Water, vinegar or rum
  1. Work quickly in a cool room. Have cool hands.
  2. Sift the flour into a mound on a moulding board.
  3. Break egg into a hollow in the centre of the flour.
  4. Cut butter into pieces dropping them all over the surface.
  5. With a spatula, cut in the butter and eggs until blended and then add salt, sugar and sufficient liquid to form dough.
  6. Knead for 5 minutes or until smooth. Cover with a bowl and allow to stand for 1 to 2 hours before rolling out.
  7. Should be baked in a hot oven (400F/205C) when used.

Use for open fruit pies, cheese, cherry etc.…
