German Egg Sauce (Maria Teresa Faria de Freitas)
2 egg yolks
½ gill sherry
1 dsp castor sugar


  1. Separate the yolks from the whites and whisk well.
  2. Put the ingredients into a bowl.
  3. Whisk over gentle heat until frothy throughout.

Use at once.
