Fresh Salmon  – good and easy (Gene Watkinson from Patricia Murphy)
FISH
½ tsp salt
4 salmon steaks
½ tsp black pepper
4 oz butter
2 tbsp parsley - chopped

SAUCE
2 tbsp lemon
8 oz cream
½ tsp oregano
2 oz wine
1 tbsp paprika
8 oz mushrooms
  1. Wash the salmon and put into an ovenproof dish with half of the butter.
  2. Season with salt and pepper, sprinkle with parsley and grill for five minutes on each side.
  3. In a jug, mix the wine, lemon, oregano, paprika and cream.
  4. Slice and fry the mushrooms in the remaining butter.
  5. Stir in the mixture from the jug and heat.
  6. Serve the salmon coated with the sauce.
