Frangipani Meringue Flans  (Delma Gomes)
Pie
8 oz sweet flan pastry
Cherries
Angelica

Filling
6 tbsp softened butter
6 tbsp castor sugar
3 egg yolks
1 cup ground almonds
1/3 cup strawberry jam

Meringue
3 egg whites
4 oz castor sugar

  1. Prepare the pastry and line a pie dish. Bake and cool.
  2. To create the filling, cream the butter and sugar together on a medium beat setting until light and fluffy, and then beat in the egg yolks. Reduce beat speed to low and add the ground almonds.
  3. To create the meringue, whisk the egg whites on a high speed until stiff and then beat in half of the sugar. Finally, fold in the remaining sugar.
  4. Spread jam over the base of each flan, and then top with the filling. Spoon the meringue on top.
  5. Bake at 325F/162C gas mark 3 for 20 to 30 minutes until golden brown.

Allow to cool and then decorate with cherries and angelica.
