Flying Fish with Peanut Sauce (Fay Anne de Freitas)
5 flying fish
¼ cup of peanut butter
1 clove of garlic
Shallots

1 green pepper
1 tsp Bajan seasoning
¼ cup milk

2 tbsp butter
1 tomato diced
¼  cup hot red peppers

  1. Melt the butter in a pan with the garlic and Bajan seasoning.
  2. Add the flying fish and pan-fry until golden brown.
  3. Remove the fish and set aside in a serving dish.
  4. Sauté the tomatoes, green peppers, shallots and hot peppers in the pan.
  5. Add the peanut butter and milk and stir to distribute evenly while bringing the heat to a simmer.
  6. Pour over the fish and serve.
