Flan Of Fruit   (Maria Teresa Faria de Freitas)
Pastry:
3 oz good short crust pastry

Filling:
Fresh or tinned fruit, suitably prepared
Syrup:
1/ pint water or fruit syrup
1 heaped tsp arrowroot
3 oz loaf sugar
Juice of ½ a lemon
Colouring
  1. Make and bake pastry.
  2. Arrange fruit on it.
  3. Dissolve sugar slowly in water or syrup in a small saucepan.
  4. Boil exactly 10 minutes with lemon juice.
  5. Add blended arrowroot and cook.
  6. Colour according to fruit used and coat fruit.
