Feather Sponge  - Basic  - very good (Delma Gomes)
2 ½ cups all-purpose flour
1 tsp salt
1 cup corn oil

½ cup corn starch
1 ½ cup granulated sugar
1 cup water
4 tsp baking powder
4 eggs separated

  1. Line the bottom of 7” sandwich tins with grease-proof paper and grease lightly.
  2. Grease and line a deep 7” cake tin. DO THESE FIRST!
  3. Sieve the dry ingredients into a bowl.
  4. Mix the egg yolks together lightly with a fork and add the corn oil and water.
  5. Stir this mixture into the dry ingredients and neat well to form a smooth, slack batter.
  6. Whisk the egg whites until stiff, and then fold into the mixture

May be stored for 6 months in deep freeze. Put foil paper between each layer.
