Curried Pork with Rice [4] (Fay Anne de Freitas)
1 lb pork fillet
1 large onion finely diced
1 clove garlic crushed
1 oz lard
4 tsp curry powder

15 oz can kidney beans
½ pint chicken stock
4 oz Patna rice
3 tsp lemon juice
2 tomatoes cubed

2 tbsp tomato puree
1 tbsp Worcester Sauce
Chopped parsley
Watercress
Sliced radishes

  1. Cut the pork into 1” cubes and fry in the lard with the onions and garlic until brown.
  2. Add and fry the curry powder for 2 to 3 minutes and then add lemon juice, seasoning, tomatoes, tomato puree, beans and the stock, bringing the mixture to the boil and simmering for 20 minutes or until tender.
  3. Add the Worcester Sauce and cook for a further 2 to 3 minutes stirring to distribute evenly.
  4. In another pot, cook the rice, drain and then mix in the chopped parsley.
  5. Serve the curry in the centre of a ring of rice, garnished with watercress and radish slices.
