Crème Caramel (Fay Anne de Freitas)
1 cup sugar caramelised
2 cups Half and Half milk

2 whole eggs
¾ cup sugar
Nutmeg
1 tbsp vanilla essence
  1. Coat caramel dishes with the caramelised sugar – sides and bottom.
  2. Blend all other ingredients together,
  3. Pour over the caramel surfaces to fill each container.
  4. Half fill a two inch baking tray with boiling water.
  5. Place the caramel dishes into the tray being careful that the boiling water rises only ¾ of the way up the sides of the dishes.
  6. Bake in a preheated oven at 300F for approximately three hours for large dishes, or 1 hour for small dishes,
  7. Allow to cool. Refrigerate and serve.
