Corn Souffle (Beryl de Freitas)
1 tin corn kernels
1 cup milk
2 eggs
2 oz flour

2 oz margarine
½ cup chopped onions
½ cup chopped sweet peppers

If you use evaporated milk, half milk and half water from the corn to make a cup.
Melt margarine over low flame, stir in flour gradually, add milk and mash egg yolks in mixture. This should be smooth, then throw in desired corn, chopped onions, sweet pepper (a little sugar if you wish). When you are ready to bake it, beat egg whites until frothy and stiff and fold into mixture. Then put in a greased dish in a moderate oven. Takes about half an hour, ready to serve.
