Coconut Mousse (Delma Gomes)
1 large coconut
Sugar to taste
1 tin evaporated milk

½ pint water
½ oz gelatin
2 tbsp hot water
  1. Remove the brown skin from the coconut and grate.
  2. Add the water to the grated coconut and leave for 10 minutes
  3. Squeeze to extract the milk and strain.
  4. Add undiluted evaporated milk and sweeten to taste.
  5. Dissolve gelatin in hot water and stir into the milk mixture.
  6. Pour into a bowl or several glass bowls and refrigerate until set.
