Coconut Cake  – Very good (Delma Gomes from Carolina)
1 lb flour
3 eggs separated

½ lb margarine
2 tsp baking powder
½ lb sugar
1 coconut grated

  1. Create 1 cup coconut milk by blending the grated coconut with ½ cup of water, adding evaporated  milk as necessary to make the quantity up to 1 cup milk.
  2. Cream the butter and sugar. Gradually drop in the yolks while beating alternating with the coconut milk.
  3. Beat and fold in the egg whites.
  4. Bake in a layer pan at 350F/176C for 15 to 20 minutes.
  5. Sandwich with jam and frost the top. Finally, sprinkle with grated coconut.
