Cocoa Devil’s Food Cake (Delma Gomes)
1 ½ cups sifted cake flour
¾ tsp salt
1 cup sour or buttermilk

1 ¼ cups sugar
1 ½ tsp baking soda
1 tsp vanilla
½ cup cocoa
2/3 cup shortening (soft)
2 eggs
  1. Have the shortening at room temperature.
  2. Grease two 8” deep layer cake pans and sprinkle with flour, shaking out excess.
  3. Preheat the oven to 350F/176C.
  4. Sift the flour before measuring into a large bowl of the Mixmaster, together with the sugar, cocoa, salt and baking soda.
  5. Stir to mix and then add the softened shortening, 2/3 of the milk and vanilla.
  6. Beat on #3 speed for 2 minutes, scraping the bowl while beating.
  7. Stop mixture and scrape the beaters.
  8. Add the remaining 1/3 of the milk and the two eggs.
  9. Beat on #3 speed for 2 minutes, scraping the bowl while beating.
  10. Pour into the baking pans and bake in a moderate oven, 350F/176C for 30 to 35 minutes.
  11. Remove from pans and cool.
  12. Ice with Double Boiler Icing or Boiled Icing.

Makes 1 medium-sized cake
