Chocolate Pudding [2] (Maria Teresa Faria de Freitas)
1 tbsp butter
1 tbsp sugar
1 egg beaten
4 squares chocolate

1 tsp baking powder
½ cup flour
1 tbsp wine

  1. Keep heating while mixing
  2. Butter steam mould
  3. Steam for 2 hours
  4. Serve with wine sauce
Wine Sauce
1 dsp sugar
1 tsp wine

1 dsp water
  1. Boil sugar and water to thicken.
  2. Add wine at the end and stir in.
Chocolate Pudding (Maria Teresa Faria de Freitas)
2 oz chocolate
1 ½ oz castor sugar
1 gill milk
2 egg yolks/whites
1 ½ oz butter
Few drops vanilla essence
3 ½ oz stale cake crumbs
German egg sauce or Custard


  1. Dissolve the chocolate in the milk. Boil for a few minutes and allow to cool.
  2. Cream the butter and sugar and beat in the yolks one at a time alternately with cake crumbs, dissolved chocolate and the vanilla essence.
  3. Allow to soak covered for 20 minutes then fold in stiffly beaten egg whites.
  4. Pour into a buttered mould and steam gently.
  5. Turn out and pour the sauce.
