Chocolate Icing And Coffee Icing (Maria Teresa Faria de Freitas)
2 oz chocolate (or coffee)
½ tsp vanilla essence
8 oz icing sugar
Fresh butter the size of a large pea
Water


  1. Put the chocolate and 1 tbsp of water in a white-lined saucepan with the butter and boil until smooth and creamy and then allow to cool slightly.
  2. Add the vanilla.
  3. Sieve the sugar and add it gradually.
  4. If too thick, add a few drops of tepid water.
  5. Beat until glossy.
  6. If the icing becomes cold, place the saucepan in warm water and beat the icing until again of coating consistency.

Substitute powdered coffee in place of the chocolate to taste.
