Chocolate Cake (Delma Gomes)
½ lb butter
¾ cup cocoa
3 tsp baking powder

2 cups sugar
5 eggs well beaten
2 ¼ cups flour
1 cup iced water
  1. Beat the butter and sugar.
  2. Add the well beaten eggs, flour and water alternately.
  3. Add baking powder.

Enough for 3 good size layers

Chocolate Cake (Delma Gomes)
½ lb margarine
4 eggs well beaten
Vanilla essence
½ lb CW sugar
½ lb flour
Cocoa to taste
¼ pint iced water
2 tsp baking powder
  1. Cream the margarine and sugar adding water a little at a time until the mixture is light and fluffy.
  2. Add the eggs and stir in the flour, baking powder, cocoa and vanilla essence.
  3. Bake in a moderate oven.

Chocolate Cake – Very good (Delma Gomes from Patricia Murphy)
1 lb flour
¾ lb margarine
¼ pint water

1 lb sugar
6 eggs
3 tsp baking powder
2 oz cocoa
¼ pint milk
  1. Beat the sugar and margarine.
  2. Add the eggs one at a time beating until light and fluffy.
  3. Fold in the flour and some liquid alternately beginning and ending with flour.
  4. Bake
Chocolate Cake  - from Sunbeam book (Delma Gomes)
2 cups sifted cake flour
1 1/3 cups sugar
2 eggs
1 cup nuts chopped (opt)

1 tsp baking soda
½ cup softened shortening
3 squares unsweetened melted chocolate
¾ tsp salt
1 tsp vanilla
1 cup milk
  1. Preheat the oven to 350F/176C. But have shortening at room temperature.
  2. Grease two deep 9” layer cake pans. Sprinkle with flour and shake out excess.
  3. Melt and cool the chocolate.
  4. Sift the flour into a large bowl combining with the baking soda, salt and sugar.
  5. Add the shortening, vanilla and ¾ cup of milk and beat at #3 speed for 2 minutes, scraping bowl while beating. When stopped, scrape of the beaters.
  6. Add the eggs and the melted chocolate and the remaining ¼ cup of milk. Add the optional chopped nuts if desired.
  7. Beat on #3 speed for 1 minute, scraping the bowl while beating.
  8. Pour the batter into the prepared pans. Bake at 350F/176C for 30-40 minutes.
  9. Remove from the pans and cool on a rack.
  10. Ice as desired.

Makes one large cake.

Chocolate Cake (Fay Anne de Freitas)
6 eggs
2 ½ cups of flour
2 cups of sugar
1 cup of water
½ lb margarine
¾ cup of cocoa

1 Blend sugar and margarine until smooth.
2 Add eggs and continue beating.
3 Add cocoa and fold in water, and then flour.
4 Grease and flour baking pans and place mixture in them.
5 Cook for approximately 20 minutes at 350F
Chocolate Cake (Gene Watkinson)
Cake
2 ½ cups flour
5 eggs well beaten
½ lb butter


¾ cup cocoa
1 cup ice water

2 cups sugar
3 tsp baking powder
Filling
Icing sugar


1 heaped tsp butter

Cocoa to taste
  1. Beat the butter with the sugar until fluffy and then add the eggs and mix.
  2. Add the flour and water adding/mixing alternately.
  3. Add the baking powder and cocoa mixing well.
  4. Turn out into a cake tin and bake at 350F/176C until firm. Cool on a wire rack.
  5. To create the filling, add the cocoa to the butter and beat well.
  6. Sift in the icing sugar and mix to a creamy consistency.
  7. Cut the cake laterally in half and use a palette knife to spread the filling on the cut faces of the bottom half and top half and then replace the top half.
