Chinese Stock (Fay Anne de Freitas)

A basic stock used for soups and general use in Chinese cooking.
Keeps for 4 to 5 days in the fridge, but may be frozen for later use.

1 lb 10 oz chicken pieces
1 lb 10 oz pork spare ribs
6 pints cold water

3 to 4 pieces fresh ginger root crushed
3 to 4 spring onions tied into a knot

3 to 4 tbsp Chinese rice wine, saki, or sherry
  1. Trim off excess fat from chicken and spareribs.
  2. Chop into large pieces.
  3. Place in water with ginger and spring onion knot, and bring to the boil.
  4. Continuously skim off any scum.
  5. Once boiling, reduce heat to simmer for 2 to 3 hours.
  6. Strain the stock and discard the remnant chicken, pork, ginger and spring onions.
  7. Add the Chinese rice wine, or Saki, or sherry.
  8. Bring to the boil again and then simmer for 2 or 3 minutes to distribute evenly.
  9. Leave to cool and then store in fridge or freezer.
