Chicken Pâté (Gene Watkinson)
8 oz chicken livers
Pinch of celery salt or thyme
1 small clove garlic
4 rashers streaky bacon

3 oz butter
1 tbsp sherry or brandy
Salt and pepper

1 small onion
1 tbsp cream or milk
1 pinch mixed spice

  1. Chop the bacon and onion and fry in the butter until soft.
  2. Chop the livers and add, cooking gently for five minutes. Remove from the heat.
  3. Add salt, pepper, spice, garlic and thyme.
  4. Add a little to a blender, blend and then add further amounts and blend until all is blended.
  5. Add the brandy and cream or milk and stir in.
  6. Pour into a small, deep pan or dishes and freeze.
