Chicken Liguanea (Fay Anne de Freitas)
2 deboned chicken breasts
1 lb frozen chopped spinach or broccoli spears
1 small can of cream of chicken soup

½ cup mayonnaise
2 dsp curry powder or dill
Breadcrumbs
Grated Parmesan cheese
  1. Skin and halve the chicken breasts.
  2. Place a layer of spinach or broccoli in a casserole dish and place a layer of chicken on top. Add a second layer of vegetables and finally cover with chicken.
  3. Heat the soup, undiluted, and when hot add the mayonnaise and curry powder/dill, stirring for a few seconds.
  4. Pour the mixture into the casserole and cover with breadcrumbs and grated cheese.
  5. Preheat over to 400F and then place the casserole in the over and bake for 45 minutes.
