Chicken du Jardin Tropicale (Fay Anne de Freitas)
5 or 6 chicken breasts or thighs
2 chicken bouillon cubes
½ cup milk

½ cup pineapple juice
¼ cup tomato ketchup
1 cup water

1 lime
Seasoning to taste

  1. Skin the chicken, rub and wash with lime.
  2. In a saucepan, boil the water and then add the bouillon cubes and stir.
  3. Continue stirring while adding the milk and then add the ketchup.
  4. Finally, add the pineapple juice, bring to the boil and remove from the heat.
  5. Place the chicken in a baking dish with 2” high sides.
  6. Pour the basting mixture from the saucepan over the chicken.
  7. Preheat the oven to 400F and then bake the chicken for 75 minutes or until brown on the surface but still juicy inside if pricked.
