Chicken Cutlets (Delma Gomes)
6 oz chicken chopped/cooked
1 oz mushrooms chopped/cooked
3 tbsp white sauce
Flour

2 oz ham chopped/cooked
1 tsp parsley chopped
1 egg
Uncooked macaroni

¾ cup grated cheese
Salt, pepper, nutmeg
Breadcrumbs

  1. Mix all of the main ingredients together over gentle heat.
  2. Turn onto a plate and leave until cool.
  3. Cut into 8 portions and shape into cutlets using a little flour.
  4. Dip in the beaten egg and coat with breadcrumbs and fry in hot fat until golden brown.
  5. Place a small piece of macaroni in the end of each cutlet and then fix the cutlet frill.
