Cheese Soufflé [6] (Maria Teresa Faria de Freitas)
1 ½ cups hot undiluted evaporated milk
6 eggs separated into whites and yolks
4 tbsp butter

½ lb American sliced cheese
4 tbsp flour
1 tsp salt

  1. Make a sauce by heating the butter, flour, evaporated milk, and salt.
  2. When thick and smooth, remove from the fire.
  3. Add ½ lb American sliced cheese. Stir until melted.
  4. Add 6 beaten egg yolks. Mix well and leave to cool.
  5. Fold in the beaten egg whites.
  6. Pour into a 2 qt casserole. Bake for 1 ¼ hours at 300F.
