Cheese Soufflé (Fay Anne de Freitas)
3 eggs
1 oz butter
½ oz flour

½ pint milk
Salt and pepper to taste
3 oz grated cheese

  1. Separate the eggs.
  2. Melt the butter and stir into the flour in a bowl.
  3. Add milk gradually, stirring continuously until boiling.
  4. Leave to cool slightly.
  5. Add the egg yolks, beating well.
  6. Season with salt and pepper.
  7. Add the grated cheese.
  8. Whisk the egg whites until stiff and add by folding in.
  9. Pour into a well-greased souffle dish.
  10. Bake at 350F for half an hour until risen and set.
