Cheese Pie or Cheese Cake (Delma Gomes)
German sweet pastry
4 egg yolks, slightly beaten
4 egg whites, beaten stiff not dry

Grated rind of 1 lemon
1 cup sugar
2 cups dry cottage cheese
1 cup butter
¼ tsp nutmeg
¼ cup sherry
  1. Line a 9” pie tin with pastry.
  2. Cream the butter with the sugar, and add the other ingredients, folding in the egg whites last.
  3. Fill the pie tin and bake for 30 minutes in a hot 400F/205C oven.

Cheesecake (Fay Anne de Freitas)
1 x 7-inch round sponge flan
2 eggs separated
3 to 4 oz castor sugar

6 fl. oz double cream
Juice of one small lemon
1 to 2 oz of sultanas or raisins

2 tsp gelatin
½ lb cheese curd
  1. Select a loose-bottom 7” cake tin and lay the sponge flan inside.
  2. Add a little water to gelatin and melt over hot water, stirring carefully, Allow to cool.
  3. In a bowl, mix the cheese, sugar, cream, egg yolks and lemon juice and beat until smooth.
  4. Add the melted gelatin and stir to distribute evenly.
  5. Whisk the egg whites until stiff. Fold into the cheese mixture. Fold in the sultanas/raisins.
  6. Pour into the baking tin on top of the flan.
  7. Refrigerate for several hours, or preferably, overnight.

Cheesecake Tart – individual [6] (Fay Anne de Freitas)
½ lb cottage cheese
2 ox castor sugar
Pinch of salt
2 separated eggs
2 tablespoons melted butter
Puff pastry
½ oz plain flour

  1. Crumble the cheese into a bowl..
  2. Work in the sugar, salt, flour, egg yolks and butter.
  3. Whip the egg whites and stir in one tablespoon into the bowl.
  4. Fold in the remaining egg whites.
  5. Brush the ramekins with butter and then divide the mixture into them.
  6. Roll out the puff pastry and the cut and place circles on top of each ramekin.
  7. Brush with cold water, sprinkle with castor sugar.
  8. Bake at 350F for 20 minutes.

Serves 6 in Ramekins
