Cheese Strata – very good (Delma Gomes)
12 slices stale bread
½ lb Canadian loaf cheese

¾ tsp salt
2 1/3 cups milk

  1. Trim the crusts from the bread and arrange 6 slices in the bottom of a buttered baking dish.
  2. Slice the cheese and place on the bread.
  3. Beat the eggs slightly – then add milk and seasoning.
  4. Pour the milk mixture over the bread.
  5. Cover and keep in refrigerator cabinet until ready to bake.
  6. Place in a shallow pan of water and bake at 350F/176C for 45 minutes or until the custard is set. The bread should puff up and brown – the thorough chilling makes the “strata” puff like a soufflé.
  7. Serve at once.
