Celia’s Pudding (1980) (Maria Teresa Faria de Freitas)
3 cups flour
1 cup butter
½ cup icing sugar
½ cup lemon juice

2 cups sugar
½ cup flour
4 eggs
1 tsp baking powder


Method:
Mix 3 cups of flour, 1 cup of butter and ½ cup of icing sugar and pack in the bottom of a 9” x 13” pan. Bake at 350F for 20 minutes.

Beat the eggs well and add the lemon juice, sugar, ½ cup of flour and the baking powder. Blend well together.

Add grated lemon peel to this recipe to strengthen the lemon flavour.

Pour on top of the baked crust and return to the oven for 25 minutes.
