Celery, Carrots and Cider (Delma Gomes)
1 head celery
1 tsp heaped chopped parsley

1 lb carrots
Fresh ground salt

1 pint cider
Fresh ground pepper

1. Trim the celery and cut into two lengths.
2. Peel and slice the carrots and also cut into two lengths.
3. Bring the cider to the boil and add the carrots.
4. Simmer for 10 minutes then add the celery and seasoning.
5. Cover and simmer for 20 minutes.
6. Strain the vegetables, retaining the liquid, and place in a warm dish.
7. Reduce the liquid by fast boiling until only 3 – 4 tbsp are left.
8. Pour over the carrots and celery and serve.

Delicious served with ham.
