Castle Pudding (Maria Teresa Faria de Freitas)
2 eggs
Their weight in butter, flour, and castor sugar
Milk if necessary
¼ tsp baking powder
Grated lemon rind
1 gill jam sauce (see below)
1 large or 6-7 small moulds


  1. Cream the butter and sugar.
  2. Sieve the flour and add it lightly with the other ingredients and eggs. Beat well.
  3. Add the baking powder when adding the last two spoonful’s of flour.
  4. Fill the moulds 2/3rds full with the mixture.
  5. Bake in a moderate oven for 30-60 minutes according to size.
  6. Turn out and pour jam around.

NOTE: These puddings may be steamed in which case the small moulds will take 30-40 minutes whilst the large moulds will require 1 to 1 ½ hours.

JAM SAUCE
1 gill water
4 lumps loaf sugar
2 tbsp raspberry jam
Colouring
1 tsp arrowroot blended with a little water
Rind and juice of half a lemon
