Carrot Cake  (Gene Watkinson from Patricia Murphy)

14 oz self-raising flour
1 tsp salt
2 oz unsalted butter


14 oz caster sugar
14 oz grated carrot
1 tsp vanilla essence

14 oz sunflower oil
1 tsp mixed spice
4 eggs
Topping
Grated zest of 1 lemon
Juice of ½ lemon


6 oz full cream cheese

12 oz icing sugar
  1. Whisk sugar, eggs and oil until thick and creamy.
  2. Sift the flour, spice and salt together.
  3. Add to the mixture and then stir in the carrots and essence.
  4. Bake at 335F/170C for about 40 minutes.
