Buffet Loaf (Delma Gomes)
1 uncut sandwich loaf – 1 day old
Pinch of dry mustard
4 tbsp watercress chopped

10 oz butter
4 hard boiled eggs chopped
Green colouring

2 cans devilled ham
6 tbsp mayonnaise
½ lb cream cheese

  1. Remove the crusts from the loaf and cut three times lengthwise into four long slices.
  2. Spread each slice with butter except the outside of the top and bottom slice.
  3. Cream 2 oz butter with ham, add mustard and spread over 1 slice then cover with next slice.
  4. Cream eggs with mayonnaise, season, and spread on second slice and cover with third slice.
  5. Blend watercress into 2 oz butter creamed with 2 oz cheese, add colouring, and spread on third slice.
  6. Cover with top slice.
  7. Wrap with baking foil and place between two baking sheets with a weight on top.
  8. Leave until required.
  9. To serve, spread outside top with remaining cream cheese creamed with 4 oz butter.  Pipe and decorate. Cut into slices.
