Bruschetta (Fay Anne de Freitas)
1 ½ cups coarsely chopped, seeded tomatoes
2 tbsp olive oil

1 tsp red wine vinegar
Pepper
Fresh chopped basil
Crusty Italian bread
Shredded Parmesan cheese
(Prior day) Slice the plum tomatoes into wedges and remove most but not all of the seeds. Combine tomato wedges, olive oil and red wine vinegar and pepper in a bowl and place in fridge overnight.

  1. When ready to serve, chop the fresh basil and add to the mixture.
  2. Slice the bread, place on a baking sheet, brush with olive oil. Bake at 350F for approximately 5 minutes or until lightly toasted.
  3. Remove from the oven, top with the tomato mixture and then top with a bit of shredded parmesan cheese and return to the oven for 3 to 5 minutes, or until the cheese begins to melt.
  4. Serve immediately.
