Bruschetta (Fay Anne de Freitas) | ||
1 ½ cups coarsely chopped, seeded tomatoes 2 tbsp olive oil | 1 tsp red wine vinegar Pepper Fresh chopped basil | Crusty Italian bread Shredded Parmesan cheese |
(Prior day) Slice the plum tomatoes into wedges and remove most but not all of the seeds. Combine tomato wedges, olive oil and red wine vinegar and pepper in a bowl and place in fridge overnight.
