Breakfast Rolls (Delma Gomes)

1 lb flour
 
8 oz warm  milk
 
2 oz margarine
     


1 tsp sugar
1 tsp salt

1 egg beaten
½ oz fresh yeast or 2 tsp dried yeast
Egg wash
1 egg beaten
Poppy seeds (optional)


1 tsp sugar


1 tbsp water
  1. Blend 5 oz flour with sugar, yeast and milk.
  2. If using dried yeast, blend with a little warm milk, set aside until frothy and then add to the other ingredients.
  3. Mix remaining flour with salt and then rub in the margarine. Add the egg and gradually incorporate the flour and yeast mixture.
  4. Mix well to give a soft dough that leaves the sides of the bowl clean.
  5. Knead until it is smooth and no longer sticky – about 10 minutes
  6. Bake

Use this basic dough to make a variety of shapes  – and serve at a dinner party with cold meats.
