Bolos de Prata - Silver Cakes (Maria Teresa Faria de Freitas)
 
1 lb of flour
7 well whipped egg whites
½ lb of butter

2 soup spoons of boiling water
¾ lb of sugar
1 egg white
1 lemon peel
The juice of half a lemon
1 spoon of English yeast

Whip the butter, after washing off any salt, until it is quite white. The first ingredient to be added to the whipped butter is the lemon peel and juice. Add the flour and the sugar, mixing well. Then add the 3 spoons (as above) and the eggs (already partially whipped) and a little milk. Then, gradually add all the other ingredients whilst beating always in the same direction. Finally, add the boiling water and the yeast.

This recipe is identical to Bolos d'Ouro - Golden Cake except that egg whites are used.
