Bolo Madeira - Madeira Cake (Maria Teresa Faria de Freitas)
1 lb flour
1 lb (brown) sugar
½ lb butter
¼ lb citron
½ teaspoon of cinnamon
8 eggs
1 glass of (Madeira) wine
¼ lb crushed almonds
¼ lb raisins
2 teaspoons of baking soda
½ glass of boiling water
Wash the butter so as to remove any salt (obviously, this step is not currently necessary if you use unsalted butter), then beat it until it turns white. Add the sugar and eggs and continue beating. Then, add the citron and almonds, beating continuously. After than, add the raisins, the cinnamon, the boiling water and the wine. The last ingredients to be added are the flour and the baking soda. Once all is well mixed, place in forms greased with butter and lined with paper. Often, fine slices of citron are placed on top of the cakes in the middle and sugar is sprinkled on top.
