Boiled Frosting American (Delma Gomes)
1 cup sugar
1/3 cup water

1/8 tsp cream of tartar OR
½ tbsp lemon juice
2 tbsp stock
1 stiff egg white
  1. Put sugar, water and either cream of tarter or lemon juice in a pan and stir until the sugar is dissolved. Bring to boiling point.
  2. Add 3 tbsp of the resulting syrup to the beaten egg whites, beating constantly after adding each spoonful.
  3. Boil the syrup to 240F or until it spins a long thread.
  4. Pour gradually over egg whites beating constantly until thick enough to stand up in peaks.
  5. Add quickly to cake before the frosting becomes too stiff.
