Banana Creole (Fay Anne de Freitas
Marmalade
Brown sugar

Currants
Hand of bananas
Sultanas
Mixed fruit peel
  1. Put a generous spoonful of marmalade at the bottom of a fireproof dish.
  2. Lay the peeled bananas flat on the bottom.
  3. Sprinkle with brown sugar, a few currants, sultanas and some mixed fruit peel.
  4. Pour a glass of rum over everything.
  5. Leave sit for a few minutes to allow some alcohol fumes to evaporate..
  6. Bake in a slow oven for 45 minutes to an hour.
