Baked Pastelle (Fay Anne de Freitas from Helen Sulliman)
½ lb butter or margarine
2 chopped onions
1 ½ cups very fine grind cornmeal – Promosa
Salt to taste
Seasoning peppers

1 lb minced meat/chicken/fish
1 tin creamed sweet corn
1 ½ cups milk or coconut milk
2 eggs
Minced seasoning
  1. Season meat to taste.
  2. Bring meat, butter, onions and corn to the boil.
  3. Mix together cornmeal, milk, salt and beaten eggs.
  4. Add immediately to meat mixture.
  5. Optional – add olives, capers, raisins to meat mix.
  6. Optional – decorate with stuffed olive halves.
  7. Bake uncovered for 45 minutes at 350F
