Bacon Savoury Rice (Fay Anne de Freitas)
2 oz butter
6 rashers of bacon
1 small onion chopped

4 oz mushrooms
8 oz long rice
Watercress
1 pint water
Salt and pepper
  1. Melt butter.
  2. Remove bacon rind, cut or chop two rashers into small pieces and cut remaining rashers in half and roll tightly. Fry all of the bacon in the butter until crisp.
  3. Remove the rolls to one side.
  4. Wash and slice the mushrooms and fry in the remaining butter.
  5. Remove the mushrooms and bacon bits and keep to one side.
  6. Fry the chopped onion and rice for 10 minutes in the butter.
  7. Add the water, salt and pepper.
  8. Bring slowly to the boil and simmer for about 15 minutes until rice is tender and the water has been absorbed.
  9. Return the mushroom and bacon pieces to the pan and mix well.
  10. Place rice on serving dish, garnish with the bacon rolls and watercress.
