Apricot Amber (Gene Watkinson)
7 oz short crust or flan pastry
1 oz butter - melted
15 oz can apricots


2 oz caster sugar
2 eggs separated

  1. Roll out the pastry and use it to line an 8” flan case. Trim the edges and crimp. Bake blind in the  oven at 425F/220C for 15 minutes.
  2. Drain the apricots and sieve them into a bowl. Stir the egg yolks and melted butter into the pulp and then pour into the cooked flan case .
  3. Reduce the temperature to 350F/180C and cook for 15 minutes or until the filling is slightly set.
  4. Whisk the egg whites, add caster sugar, continue to whip. When stiff, pile on the apricot filling.
  5. Bake for 10 minutes until slightly brown.
